Food Training Ordinance Requirements:
The Adair County Food Sanitation Ordinance describes the training requirements for managers and food employees working in food establishments in Adair County.
Those requirements are summarized below:
Restaurants Deli Caterers Mobile Units |
Establishments preparing or storing potentially hazardous foods must have at least one employee on duty with ServSafe Certification or equivalent. In addition, 50% of all employees on duty must possess a Basic Food Sanitation Certificate. |
C-Stores |
Establishments providing unfrozen potentially hazardous foods (such as hot dogs on a roller grill) must have a manager with ServSafe Certification or equivalent. In the manager’s absence, one employee on duty must possess a Basic Food Sanitation Certificate. Raw potentially hazardous food preparation would be prohibited.

Retail
(i.e. dollar stores) |
Establishments selling pre-packaged food only (no food preparation, such as in a dollar type store) must have a manger in possession of a Basic Food Sanitation Certificate.

Taverns |
Establishments providing unpackaged non-potentially hazardous foods (such as popcorn) must have one employee on duty with a Basic Food Sanitation Certificate.
|
Temporary |
Training for managers and employees working in temporary food establishments (events lasting more than one day) is encouraged.

Training Courses
Both the Basic Food Sanitation Course and the ServSafe Certification Course are provided by the Kirksville Area Technical Center and/or the Health Department. You may contact the Technical Center at (660) 665-2865.
Online Nationally Accredited Food Manager Certification Courses (Tests will be require proctor at a testing center).

- Each ServSafe course consists of 4 sessions- you must attend each session and pass the written exam
- ServSafe 6th edition books must be ordered prior to class from ServSafe.com

- Food Servers can complete the following Online Nationally Accredited Food Manager Certification Courses however;
- The written exam must be taken (proctored) at a testing center such as the Kirksville Area Technical Center
